If you have had one too many sugar cookies over the years of holiday celebrations, this recipe will be a fresh, welcome departure from the norm. Whip up a batch of these Cranberry and Orange Pinwheels to spice up your seasonal festivities! You will need:
- 1 cup of cranberries
- 1 cup of pecans
- 1 cup of softened butter
- 1 ½ cups of granulated sugar
- ¼ cup of brown sugar
- 3 cups flour
- 2 eggs
- ½ teaspoon of baking powder
- ½ teaspoon of salt
- 2 teaspoons of orange peel, finely shredded
For The Filling: Add the cranberries, brown sugar, and pecans in a food processor (a blender will work too). Process until chopped finely.
For The Dough: Combine butter, granulated sugar, baking powder, and salt with an electric mixer. Add eggs and orange peel. Once combined, add the flour. Chill for one hour.
To Combine: Roll half the dough into 10” squares and spread half the filling over it. Roll up the dough, pinch to seal it, and wrap it in plastic wrap. Repeat with the other half of the dough and chill for at least four hours. Take out and cut rolls into ¼ inch slices. Bake at 375 on an ungreased cookie sheet for 8-10 minutes. Enjoy!
