The Thanksgiving holiday is full of fun, family, and lots of food! It can be tempting to neglect your usual healthy eating habits during the holiday season. However, with this healthy Thanksgiving side dish, you won’t have to! When finalizing your Thanksgiving menu be sure to incorporate Healthy Potato Gratin with Herbs!
First, you should preheat the oven to 400 degrees, and lightly grease an 8-inch cake pan, then line it with parchment paper. Heat 1 ½ tbsp. of olive oil, 1 large, minced shallot, 1 ½ tsp. thyme, and ½ tsp. chopped rosemary over medium heat for 4 minutes. Add 2 cups of low-sodium chicken broth, and bring the mixture to a boil. Continue to cook this for the next 10 minutes. You will then overlap layers of 2 pounds of sliced red potatoes in the cake pan with salt and pepper. Add the broth on top of the potatoes, and cover with a sheet of foil. Bake for about 1 hour, and then remove the foil and parchment paper to continue to cook for another 10 minutes. Your gratin is now ready to serve!
