Try This Healthy Split Pea Soup- Your Family Is Sure To Love It!
As the weather cools off, there is nothing quite as nourishing as a hot bowl of hearty soup. If you are looking for a protein-filled option great to freeze for future chilly days, this recipe is for you. Start with:
- 2 cups of green split peas
- 2 large chopped carrots
- 2 chopped yellow onions
- 6 cups of vegetable broth
- 1 T of olive oil
- ½ t of sea salt
- 1 t of paprika
- ½ t of cumin
- ¼ t of cayenne pepper
- 4 hard-boiled, chopped eggs
In a large saucepot, heat the olive oil. Add onions and cook until they have caramelized—about twenty minutes. Add the carrots, peas, broth, and spices and boil. Reduce heat and let simmer until the peas and carrots are cooked—about 35 minutes. Carefully transfer into a blender or food processor and puree. Add back in to the saucepot and season to taste. Top with egg and enjoy!
