Mason Jar Meals: Recipe For Grab & Go Lunch

You want to eat right, but it can be hard when you’re pressed for time. The good news is that if you pack a few mason jar meals in advance, you can have a quick, easy, healthy, and delicious lunch you can just grab and go in the morning!

This burrito mason jar recipe is one of the easiest, most satisfying meals you’ll ever have ready to go in under 30 seconds in the morning.

  • 1 chopped large tomato
  • ½ chopped red onion
  • ¼ de-seeded and chopped jalapeno
  • 3 sprigs of chopped cilantro
  • 1 tablespoon + 2 teaspoons of olive oil
  • 2 limes
  • Sea Salt
  • ½ drained and rinsed small can of black beans
  • 1 avocado
  • Handful of corn tortilla chips
  • 3 tablespoons of sour cream
  • ½ cup of Romaine lettuce

Make salsa by stirring together the tomato, onion, jalapeno, cilantro, one tablespoons of olive oil, the juice of half a lime, and salt to taste. Split between two mason jars.

In the same bowl, stir the black beans with a teaspoon of olive oil, the juice of a quarter of a lime, and a pinch of salt. Divide between your jars.

In the bowl, mash the avocado with the juice of a quarter lime, a teaspoon of olive oil, and pinch of salt. Split between the jars, then top each jar with sour cream.

Divide the lettuce and corn chips between the jars, then top with a lime wedge.
